STEW

A good hearty stew is the type of dish you can cook up and serve for days to come. In fact, a basic stew can be made with almost whatever needs using up in your fridge. The epitome of comfort food, a stew usually has only a few staple ingredients: meat or chicken, stock, canned or fresh tomatoes, onions, and potatoes. When cooking your stew, try adding carrots and butternut for an added nutritional boost, plus any other veggies of your choice, such as peppers, baby marrows, cauliflower or brinjals.

For an equally filling meat-free version, substitute meat or chicken with beans and pulses. Dried beans are even cheaper than canned and can be bought in bulk. Bored of eating your leftover stew? Use your stew to make a hearty pie instead! Simply pile the stew into a casserole dish, top with ready-made puff pastry, brush with beaten egg and bake until the filling is hot and the pastry is puffed and golden.
