Chickpeas, also known as garbanzo beans, are small, yellowish round beans that are a popular sight in many Middle Eastern dishes. They contribute a rich, creamy, nutty flavour and work well in a wide variety of delicious dishes. With one cup of canned, drained and rinsed chickpeas providing ten grams of protein and a somewhat meaty texture, they are a viable substitute for meat in many dishes.

Chickpeas are one of the easiest beans to sprout, and upon sprouting they obtain a crunchier texture as well as a rich, creamy and nutty flavour. Add them to stews, soups, stir-fries or simply top them with dressing and enjoy as a side dish.
