  • 2 cups bambara groundnut soaked overnight
  • 2 litres water
  • 3 tbsp olive oil
  • Knorr Peri-Peri Sauce
  • 1 Place the soaked Bambara groundnuts (nduhu) and water in a saucepan and bring to the boil.
  • 2 Cover and simmer for 2-3 hours or until tender.
  • 3 Drain well then pat dry using a clean tea towel.
  • 4 Preheat the oven to 180 degrees Celsius.
  • 5 Transfer the Bambara groundnuts (nduhu) to a mixing bowl, add the olive oil and KNORR Peri-Peri Sauce. Toss well to coat.
  • 6 Roast in the preheated oven for 45-50 minutes or until golden and crispy.
  • 7 Serve as a snack or store in an airtight container in the fridge for up to 3 days.
