  • 1 red pepper, cut into thick strips
  • 1 yellow pepper, cut into thick strips
  • 400g can tomatoes, diced
  • 2 cups brown basmati rice, rinsed
  • 1 KNORR Chicken Stock Pot
  • 2 onions, halved and sliced
  • 500g beef sausage or sausage of your choice
  • 15ml olive oil
  • 1 Heat 1 tablespoon oil in a large saucepan.
  • 2 Add sausages and cook, turning regularly, for 5 minutes or until browned.
  • 3 Remove from the pan and slice thickly.
  • 4 Reduce heat to medium.
  • 5 Add remaining oil, onions and peppers to the frying pan.
  • 6 Cook, stirring occasionally, for 3 to 4 minutes or until soft.
  • 7 Add rice, tomatoes, KNORR Chicken Stock Pot and sausages.
  • 8 Stir to combine.
  • 9 Bring to the boil.
  • 10 Reduce heat to medium and allow to simmer, covered, for 10 minutes.
  • 11 Set aside, covered, for 15 minutes (this allows rice to complete cooking).
  • 12 Season with salt and pepper.
  • 13 Spoon hotpot into serving bowls.
  • 14 Serve.
